Our experienced team has processed everything from big bucks, kangaroos, alligators to giraffes (yes, really). We specialize in wild game processing and have the facilities to handle a wide range of animals, including deer, exotics, and more. In addition, we offer custom slaughter for beef and hogs, ensuring every animal is handled with care and processed to the highest standards.
Bring your harvest in as soon as possible, kept cool, clean, and properly tagged. If you can’t get it to us right away, keep the animal on ice (drained, not soaking) or refrigerated to preserve meat quality. Once you arrive, our team will walk you through cut options and answer any questions so your meat is processed exactly how you want it.
We sure can. Just let us know at drop-off and we'll coordinate the packaging and carrier for you. We'll also help you meet any paperwork or shipping regulations. Yes, we ship in state. To ship your product, you will need to provide a physical address either to your home or office (no PO box) and provide credit card information so we will be able to process your payment. We accept all major credit cards. All orders are shipped via FedEx. For within the State of Texas, orders are shipped on the ground, otherwise, orders are shipped via Express Saver on the 2nd Day. Overnight shipping is available upon request.
Orders are shipped Monday – Wednesday to ensure your package arrives by Friday and not left in a warehouse over the weekend. Perishable items are shipped frozen in a Styrofoam cooler with dry ice.
Our dry products are crafted using time-honored methods that focus on quality, flavor, and consistency. We use natural casings, which allow the product to breathe during the curing and drying process—resulting in better texture, deeper flavor, and an authentic finish you can taste.

Our beef goes through a unique 4-week aging process designed to maximize both flavor and tenderness. We start with two weeks of dry hanging, allowing natural enzymes to break down muscle fibers while moisture slowly evaporates—concentrating the beef’s flavor and creating a richer, more robust taste.
We then follow with two weeks of wet aging, where the beef continues to tenderize in a controlled environment, locking in moisture and enhancing that smooth, juicy texture.
Because we use locally raised Wagyu from La Fortaleza Beef, known for its exceptional marbling, this process is elevated even further—delivering a buttery, tender bite with deep, beef-forward flavor. The result is the best of both worlds:the richness of dry aging paired with the juiciness of wet aging, creating a noticeably superior eating experience in every cut.
Planning the right amount depends on your menu and guest list, but here are some reliable guidelines:
For most events, we recommend ½ to ¾ pound of meat per person. If meat is the main focus of the meal (like fajitas or barbecue), lean closer to the higher end to make sure everyone leaves satisfied.
For menudo, plan for about 1 cup per person. If it’s the main dish, you may want to increase portions slightly depending on your crowd.

A good rule of thumb is that 1 cubic foot of freezer space holds about 35–40 pounds of packaged meat. Most standard home freezers range from 5–20 cubic feet, depending on the style and size.
For reference:
- A 20 lb order takes up roughly half of a cubic foot—about the size of a small shoebox
- A quarter beef typically fits in a 5–7 cubic foot freezer
- A half beef usually requires 10–15 cubic feet
